Organic Pétillant Naturel Chardonnay

Daniel’s first official sparkling wine is the 2022 Pétillant Naturel aka Pet Nat. In classic Decibel style, we are pushing the boundaries a little to bring you this delightfully refreshing fizzy number from BioGrow certified organic Chardonnay.

The delicate fizz is produced through an ancient method by bottling partially-fermented wine and allowing the yeast to finish their job in the bottle which traps in the natural bubbles. The spent yeast hulls, aka “lees”, remain in the bottle so the wine has a natural haze to it. With refridgeration, the lees will settle to the bottom.

Vinaceous

Snake Charmer Shiraz

Shiraz is made from grapes grown the Russell Road vineyard in Frankland River, the sub-region of the Great Southern that produces the most complex flavored and richly textured Shiraz in Western Australia. Typical inland continental climatic conditions of warm days and cold nights are ideal for the growing of dense, full flavored Shiraz. Grapes harvested at full ripeness in the cool of the night were crushed into open topped fermentation vessels, color and tannin extraction was facilitated with both plunging and pumping over of the fermenting liquid. At dryness the wine was pressed off skins with retention of the pressings in the blend. The wine was then matured in 100% French oak barriques for 15 months.
